Egg-ceptional Egg Dishes
For Easter Brunch, or any time

Now that Easter is gone it’s time to do something with all those hard boiled eggs. Sure, you can make some spicy deviled eggs with those decorated ones or a mean egg salad, but, before you boil the whole carton, save a few for a brunch. There’s nothing like a delicious eggs Benedict or maybe a Spanish omelet. Eggs are great for breakfast or brunch. They pack a lot of protein and are basically perfect for making an easy egg scramble with pretty much anything you have in the fridge.

Over at The Toasted Yoke Cafe it’s always about eggs. A breakfast, lunch and brunch chain born in Houston, with multiple locations in the area, where you can find eggs galore, French toast, pancakes as well as mimosas, beer and wine. Normally open from 7:00 a.m. to 3:00 p.m. the cafes make everything from scratch and source local produce. And, since this is Texas, they offer a great breakfast taco.

While both Austin and San Antonio claim to be the birthplace of the breakfast taco, this hand-held morning treat is found all over Houston. It’s hard to say when and who really invented the treat, it’s probably been around for ages. What Texan wouldn’t think to fold some meat and scrambled eggs into a warm tortilla? Add some hot sauce or queso and you’ve got a meal to go.

One of the most popular items at The Toasted Yoke is their brisket taco. And while you can sample the dish at multiple locations around the Houston area like the one in The Heights), you can also now make this mouth-watering meal at home. Here is the recipe:

Brisket Taco Recipe

2 ea. Flour Tortillas
2 ea. Eggs
1/2 ea. Potato- Peeled and cubed ½”
½ cup Cooked ½” cubed Brisket (can substitute chopped bacon)
¼ cup Shred Cheddar Cheese
2 TBSP Pico de Gallo
2 TBSP Tomatillo Sauce (or a favorite green salsa)

  • Place cubed potatoes in fryer and cook 3-4 minutes until golden brown
  • In a non-stick skillet, add brisket/bacon and potatoes and heat 2 minutes
  • Add 2 eggs and scramble while mixing potatoes and brisket
  • Place 2 tortillas on warm skillet for 15 seconds on each side
  • Add cheese to mixture and remove from heat while mixing
  • Remove tortillas and fill each with half the egg, potato and brisket mixture
